Tofu salad with sweet spicy pecans and sweet potato fries! Exercising my plating skills (Taken with Instagram)
Easy tofu salad I whipped up for lunch today. Combine all ingredients into a mixing bowl and let sit for ten minutes… Or just eat it right away!
One package high protein extra firm tofu from trader joes
Half an orange bell pepper, diced
One medium red onion, diced
Two Persian cucumbers, diced
1/2 cup broccoli slaw, chopped
1/2 cup grape tomatoes, diced
3 tbsp red wine vinegar
1 tbsp lemon juice
Splash of olive oil
Salt and pepper to taste (I am heavy handed with the pepper)
Dash of garlic salt
Top with cayenne sugar pecans (I got mine from trader joe’s)
For the fries, slice two sweet potatoes into half inch thick slices. Coat lightly with olive oil, sprinkle with salt and pepper, roast for 30 minutes in a 400 degree oven and stir at the 15 minute mark. Yum!
